In 2011, the FDA Food Safety Modernization Act (FSMA) promulgated more stringent food safety requirements. FSMA aims to ensure food safety in the United States by strengthening prevention. As a result, most of Lunds & Byerlys and PAR's customers have implemented a Hazard Analysis and Critical Control Point Program (HACCP) to meet food safety standards.

Food retailers often have to track the temperature of their food several times a day to meet food safety standards. The company records the temperature of food storage and makes it available to government agencies on a regular basis. If the temperature exceeds an acceptable threshold, the stored food needs to be discarded.

Chris Gindorff, senior manager of quality assurance and food safety manager at Lund Food Holdings, said: "As the FSMA is rolled out and implemented, the food industry has invested a lot of resources to meet regulatory requirements."

The frequency of the temperature measurement depends on the company's settings. John Sammon III, ParTech's senior vice president, said: "Normally, temperature data is recorded every two hours, and when there is no automated system, the process is recorded with a stylus pen."

Last year, Lunds & Byerlys began working with ParTech to develop an automated solution to automate the food temperature tracking process. ParTech's Software-as-a-Service (SaaS) solution uses a SureCheck Advantage (SCA) unit with a temperature sensor and a self-paced built-in card reader. The system is also equipped with two types of high-frequency (HF) 13.56 MHz RFID tags - a winter-eating power supply with a built-in temperature sensor and a passive tag with a unique ID number.

When installed in the freezer, the temperature sensor tag automatically captures temperature data at five-minute intervals. The user can then retrieve the data on the handheld SCA device. The SCA is an all-in-one handheld with IR-based temperature sensor, temperature probe, webcam, RFID reader and built-in Android operating system.

When reading the temperature label, the SCA needs to be placed within a few centimeters. Non-temperature RFID transponders (tags) also provide location data. To detect the internal temperature of food, users need to login to SCA and provide their own identity before using this function. The tested data will be stored in the cloud with the time stamp.

The worker then places the SCA unit within the HF SureCheck label in the freezer. The tag ID is transmitted to the software via WiFi, and the software prompts for a measure of the temperature inside the food. After measurement, these data will be automatically transferred to the cloud software.

Gindorff said: "One of the key benefits of PAR's SureCheck Advantage system is the ability to read most of the required information and deliver it to users in seconds."

Sammon said: "The system provides a simple checklist to guide users through the checklist, which is based on the HACCP plan and allows users to check the checklist simply by setting check plans."
